I am currently running VH from a Pi 4 and client on my local PC (i9-9900k and 2080ti). The client PC is physically connected and the Pi is wireless. I am experiencing lag when using the G27 steering wheel in all racing games. These are being played locally on the client PC. I experience moments of solid connection followed by a complete drop with no input vein registered. I have tried on both the 5ghz and 2.4ghz connection with no change. Any advice is greatly appreciated.

that is your issue, you must use ethernet , the pi wireless chip is not very good

The pi uses a small 1T1R wifi chip.
Ideally you need a usb dongle with a 2T2R or 4T4R radio, to at least improve latency.
If you know linux well, you could get a wifi dongle from aliexpress with a RTL8812 or RTL8814 chip in it and compile your own driver for it
